What Makes Tammang Different
Most vegan restaurants adapt dishes to be plant-friendly. Tammang does the opposite: it reverse-engineers the most meat-heavy, fish-sauce-dependent cuisine in Thailand and rebuilds it from plants, flavor for flavor.
The restaurant makes its own vegan *pla ra* (fermented "fish") from soybeans, and its own vegan fish sauce — fermented for two to three months from fermented soybeans, kombu seaweed, roasted sticky rice, and mushrooms — to deliver the deep umami ("nua") that defines Isaan cooking. The MICHELIN Guide itself notes that Tammang retains the richness of the original by replacing fish sauce with fermented soybeans. Its dishes, from vegan grilled pork nam-tok to authentic Isaan-style grilled plates, are made by hand and clean-label, without the additives common in mass-market substitutes.

On 14 May 2026, drawn by Tammang's plant-based meat innovation, the Good Food Institute (GFI), a leading international nonprofit working on the future of food and alternative proteins, joined a workshop hosted by Tammang called "The Future of Isaan Soul" — to study and exchange knowledge toward developing the future of meat-free cuisine. Tammang has also appeared on numerous Thai television programs, and was recently invited into the house of True Academy Fantasia (TrueAF2026) — one of Thailand's best-known 24-hour reality singing competitions — to serve its plant-based Isaan food to the contestants.
